Once they’re roasted and cool enough to handle, peel off the outer shells and the thin, papery skin underneath. This part can be a bit time – consuming, but trust me, the end result is well worth it.

After peeling, put the chestnuts in a food processor. Add the sugar, ground cinnamon, and ground nutmeg. Pulse until the chestnuts turn into a smooth, thick paste. Set this delicious chestnut filling aside.

Making the Dough

Now, onto the dough. In a large bowl, combine the all – purpose flour and salt. Add the chilled, cubed butter to the flour mixture. Assembling the Galette

After 30 minutes, take the dough out of the refrigerator. Lightly flour your work surface and the rolling pin. Roll the chilled dough into a large, thin circle, about 3 – 4 millimeters thick. Try to keep the shape as even as possible, but don’t worry if it’s a bit irregular; that’s part of the charm of a galette.

Gently transfer the rolled – out dough onto a baking sheet lined with parchment paper. Spread the chestnut filling evenly over the center of the dough, leaving a border of about 4 – 5 centimeters around the edges.
